Calling myself a foodie would be an understatement and there’s nothing more exciting than trying a new local restaurant! I decided to take my excitement and put it into writing by blogging about NEW and LOCAL restaurants around Phoenix that you definitely need to try! First up: Grubstak in Gilbert, AZ.
I met with Colton Grubb, the owner and creator of Grubstak, to learn more about his new restaurant, the concept behind it, and what else we can look forward to from him in the future.

Grubstak opened in Downtown Gilbert on December 5th after about 2 years of planning by Colton, who has always been a big fan of food, although he has never worked in the food industry. As a 3rd Generation Arizona Entrepreneur, Colton says that opening his restaurant in Gilbert’s growing food scene just seemed to work out with the location being available at the right time and with the area’s great vibe and sense of community. Grubstak has a relaxed, family-friendly environment with quick yet fresh food made by a true Arizona native!
You might be asking yourself “What is a Grubstak?” A Grubstak is considered a Great American Classic done in a different way. The dish is comprised of a base that is usually either waffle fries or vegetables then staked with layers of meat like roasted chicken, braised short ribs, and pork belly, followed by a layer of sauce and/or cheese. You can “Stak” it however you like or order from one of their “Signature Staks.” Am I the only one whose mouth is watering just thinking of all of the possibilities?
With all of the options, what are you going to order first? Colton says the most popular dish that is a must-try is the “Sweet Lou’s BBQ” that is named after his grandfather and comprised of 50/50 Waffle Fries (Half sweet potato and half regular waffle fries), BBQ Braised Beef, Pork Belly and Coleslaw. Colton suggests that you add in the Mac n Cheese and I couldn’t agree more! I was lucky enough to sample this dish and instantly felt a food coma coming on! So good!

Other must-try entrees: The “Rancher” with an egg added that is similar to Juevos Rancheros and the “Notorious R.I.B.” that is similar to Pot Roast. Grubstak carries 6 local craft beers and 2 local wines on tap to enjoy, as well as Nitro Cold Brew Coffee from Roastery of Cave Creek! Coke products and Iced Tea are available, also. If the entrees are enough, Colton says their desserts are just as amazing and perfect for sharing: “Give Me S’more” is the most popular but “Sweet as Honey” is just as delicious.


What about Brunch? Grubstak has that too! On Saturdays and Sundays, Grubstak serves up brunch from 10am to 3pm with options like French Toast, Frittatas and, most importantly, Mimosas with 8 oz of Champagne! On Tuesdays, Kid’s Eat Free with the purchase of an adult entrée (1 kid’s meal per 1 adult meal) and Colton has even added Friday Fish Fry’s that have completely sold out the last two Fridays in a row! The Brunch menu and weekly added event nights like Friday Fish Fry change often, so be sure to check with their Instagram page to see what’s happening before you visit!


Colton is excited to grow his restaurant and has plans to expand his Grubstak empire with either a Food Truck or Trailer later on this year. Can’t wait!
